My Actifit Report Card: February 5 2020
Today is my last day making meals for the week. I started on Saturday and planned out five meals for us.
Tomorrow we are having a frozen casserole that @mrsbozz made a while ago and Friday night we will be going out for dinner after grocery shopping.
Dinner for tonight wasn't pretty but it sure did taste good. It is something I threw together off the top of my head.
I cooked up some chunks of chicken over the weekend and seasoned them with some Italian herbs and spices. Tonight I cut up red onions and mushrooms and threw them in a pan with some olive oil.
Then I used our spiralizer and I made noodles out of zucchini. I added it all to the pan including the chicken to warm it up and finally at the end I mixed in some basil pesto and a touch of chicken stock.
We finished it off with some parmesan cheese and garlic bread. I would totally eat it again. The wife loved it too. I think next time I would add red pepper flakes to it.
Besides the garlic bread this was a very healthy dish. It was filling too.
I am going back to my usual workout tomorrow morning to try and give my Achilles a rest. I think I am suffering from tendonitis based on my Google research.
That's what I get for going too hard too fast!
