Mosaic Promise and Turmeric Chicken Ramen
With such positive feedback on my last beer review and recipe pair I thought I would do it again. Tonight I’m drinking Founders Mosaic Promise and cooking turmeric chicken ramen stir fry.
I love Mosaic Promise because of its simplicity. It showcases two unique ingredients, Mosaic hops and Golden Promise malt. The versatility of the hop’s pleasing aroma and flavor characteristics mixed with the traditional barley’s depth of flavor comprise this clean, rich, golden beer. It’s one of those beers you can drink all day. It’s got slightly higher ABV so it’s not a sessons beer, but it’s a great alternative to a light lager.
The recipe We are making is pretty simple. First cut all the vegetable:
4 garlic cloves
2 broccoli crowns
1 small onion
1 bunch green onion
1 bunch cilantro
1 bell pepper
In a glass jar, combine the honey, soy sauce, rice. Set this aside because you’ll be using it later.
Cook noodles according to packaged directions. We like just the cheap ramen noodle. We add the spice packet to the water while they boil for added flavor.
Next, in a medium bowl, toss together the chicken, cornstarch, turmeric, ginger, black pepper, and 1 tablespoon oil.
Heat 2 tablespoons oil in a large skillet over medium heat and add the chicken when hot. Brown all over, until it becomes crispy transfer to oven to finish cooking if using thighs.
Add the shallots, broccoli, onion, peppers and peanuts to the pan and cook another 2-3 minutes, until the broccoli is charring. Pour in the honey/soy sauce mix. Bring the sauce to a boil over medium-high heat then set it to keep warm.
Meanwhile, heat a medium skillet over medium heat. Add the butter, garlic, and a pinch of red pepper flakes, if desired. Cook until the garlic begins to caramelize and turn light golden brown, 1 to 2 minutes. Stir in the coconut milk, cooking 3-5 minutes, until warmed through. Remove from the heat and toss the noodles with the sauce.
To serve, divide the noodles among bowls and top with chicken. Serve with additional cilantro, green onion and limes.
