Sour Egg Plant Tamarind Masala - An absolutely stunning main course or a sandwich filling

Sour Egg Plant Masala Recipe is something that I have grown up eating. If you are someone with a sour tooth like me then you are going to go absolutely bananas after you taste this little dish of mine.

Its known for its flavour, the sweetish sour taste of tamarind, the condiments and spices and the soft texture of Baingan (Egg Plant). The egg plant is roasted and then added to the gravy part of the dish. White Its enjoyed as a dish, it’s a great ingredient to use as sandwich paste with a cheese slice. There I have given you two recipes in one 😉

TIPS

I have used small Egg Plants. You can use the big variety as well.
This is a south Indian version. You can make a north Indian version using tomatoes instead of coconut and tamarind.
Slit the small egg plants from the swollen part till the stem but do NOT cut through.
I have shallow fried the egg plant. You can also deep fry them.

Ingredients

6 Small brinjals – Slit into 4 slices but keep it joined at the stem.
1 Onion finely chopped
1 tsp tamarind paste
½ grated coconut
½ tsp ginger garlic paste
½ cup cilantro leaves (Optional)
10 curry leaves (Optional)
2 tsp coriander seeds
½ tsp turmeric powder
2 tsp sesame seeds
2 tsp cumin seeds
½ tsp red chilli powder
½ tsp Salt or to taste
1 cup water
2 tbsp ghee (clarified butter)
Ghee to shallow fry the Egg Plants.

The Recipe

Heat a pan with some ghee in it for shallow frying. When the oil is hot, add the Egg plants. Cook till they are done. Set Aside.
In a mixer add the above Sesame, Coriander and Cumin seeds along with grated coconut and grind it thoroughly in a mixer.
Heat a pan with a tsp of Ghee. Add the onions when it’s hot.
Fry till they are translucent. Add the Ginger garlic paste and fry for 30 secs.
Now add the rest of the spices, turmeric, salt, red chilli powder etc. and fry for a few secs.
Take the ground coconut seeds masala and add to the mixture. Mix well.
Tamarind paste to be added and mixed well.
Add the water and mix.
Add the Egg Plant | Baingan to the solution, Cover and allow it to cook for 20-30 secs.
Open the cover stir well and cook for another 15-20 secs and switch off the flame.
You can serve with a garnishing of Cilantro leaves or Grated coconut.

The Recipe with Pictures

Take the ground coconut seeds masala and add to the mixture. Mix well.

Tamarind paste to be added and mixed well.

Add the water and mix.

Add the Egg Plant | Baingan to the solution, Cover and allow it to cook for 20-30 secs.

There! The Yum Egg Plant dish is ready to be consumed. Did you know egg plant is also called “Brinjal” in English in many parts of the world? In fact, in India the term “Egg plant” is relatively new.
