Stir Fried Tofu - Vegan Heaven !

Stir fried Tofu is one of the easiest and quickest recipe you can make. Its tasty , healthy and nutritious. I used to make this dish with cottage cheese but of late i have started experimenting with tofu as well. I quit like the texture of tofu. While i use limited veggies so as to be able to feel the taste of Tofu or Paneer. However that should not hold you back should you feel like adding a bit of peas or potatoes.

Its a perfect snack, meal or side dish for working professionals who are always short on time. My kids make this dish a lot since it goes well with a hectic lifestyle.

Ingredients

1.5 cups chopped tofu
1/2 cup finely chopped carrots
1 medium onion finely vertically chopped.
1/4 cup roasted peanuts | broken cashew nuts ( optional)
1 tbsp grated ginger / ginger paste.
1/2 tsp coriander powder.
1/4 red chilli | pepper powder
1/4-1/2 tsp turmeric powder
1/2 tsp Italian seasoning ( optional)
1/2 tsp salt
1 tsp ghee/olive oil

The recipe

Heat a pan with a tsp of oil/ghee. Wait for it heat.
Sautee the tofu for a few mins till they turn brown. Set aside.
Pour a tbsp of oil and heat.
Add the red chilli powder | pepper, coriander powder, turmeric powder, grated/paste ginger. mix for a few secs.
Add the onions and fry till pink and translucent.
Now add the peanuts / cashew if any. Fry for a min.
Add the carrots. Cook for a couple of 3-4 mins or till carrot turns soft.
Add the tofu mix well. Be careful not to break the tofu pieces. Mix well.
Finally add the salt and Italian seasoning. Mix well. Cook for a couple of minutes.
Serve Hot.
